Today I thought I'd give making my own spelt bread rolls a crack.

The Eco Dad is labouring at the moment on a small housing construction site over at Mount Irvine. He is up very early, working hard and has long days.

Previously he was buying 3 crappy sandwiches from the local 7 / 11 which were awful white bread and just ick. He's not meant to have wheat and I knew if I didn't make him a lovely, enticing alternative we'd have a battle on our hands.

I thought it was high time I did an eco-organising session in my kitchen pantry.

It was a DISASTER!

A mish mash of chaotic bags with clips, rubber bands, plastic take away containers with random things like 2tsps of coffee grounds and a few jars here and there.

Grow now, freeze for later - its easy!
If you are growing your own organic or heirloom fruit and vege at home, you may have trouble working out how to keep it for later especially if you've had a big yeild.

Things like meat, dairy and breads freeze very well and you just put them into the freezer as they are.

Fruits and veges are a little different but with a little preperation you can freeze your excess produce, locking in texture, flavour and as many nutrients as possible.

I bought "Down to Earth - A Guide to Simple Living" the other day when I was in the florist getting my fiance` a "just-coz" rose. It was an autographed copy and I was MOST excitement to get my hands on it!

Rhonda Hetzel (author) is an inspiration! Truly. Here is her blog: well worth a read:

_ I’ve finally convinced hubby-to-be through much begging, pleading and negotiating that we NEED to do a renovation to our cute and oh-so-cosy-coz-its-oh-so-small home this Spring.

Poor man - he's been copping an eco-earful of late. Solar power, stainless steel water tanks (plastics leach) bush tanks off the greenhouse, AquaPonics set up, Rent-A-Chook chooks, goats... and now an eco-reno.

We don't do think by halves at our place! ;-)

_When I had my breakdown a few years back now, it was NOT the first one but it was my far the worst.

_ I was watching the 7pm Project tonight, followed, most uncharacteristically by A Current Affair.

Now, I am a BIG believer in the Beatles lyrics "We all live in the yellow submarine" and I feel VERY strongly that we are all on this big Mothership called Earth TOGETHER. I do not practice racism or any form of "lesser / greater" race degradation. We ARE all on this earth together. We are ALL responsible for this earth, together. We are ALL responsible for the damage we have done and together we are ALL responsible for fixing that. That applies to people as well as the planet, in my belief.
