I am practicing budgeting more tightly this month and learning how to make do more, so I looked at my wild mushroom quinotto last night and wondered what to make with what I had, to go with it.
This is a super easy, light and crunch salad perfect for summer and great with fish as a side dish.
With Mint and Sesame Dressing
You will need:
1 organic carrot, julienned
3 stalks organic celery, thinly sliced
1 organic apple, peeled and julienned
3 tbsps sesame oil
3 tbsps fresh squeezed lime juice
4 â 5 sprigs organic mint, chopped finely
4 â 5 sprigs organic parsley or coriander, chopped finely
2 organic shallots, chopped
Â¼ cup organic slivered almonds
Celtic or Himalayan salt to taste
Pinch organic brown or ground rapadura sugar
Step 2. Combine all vegetables and herbs in a salad bowl.
Step 3. Pour over oil and lime juice. Sprinkle salt and sugar. Stir until thoroughly combined.
I had this for dinner last night next to my quinotto and made it again today to use up more carrot and celery sticks left over from a party. Yum!
