I was cutting up lemons for my Lavender Cordial recipe and noticed that the lemons I had showed HUGE amount of pith and zest.
I remembered that lots of recipes call for lemon zest or pith and that can also have a lemon flavour infused within. So I just dried it â as is!
To dry lemon peel you just need to scrape off all the fruity bits (the juicey parts) so that there is only the pith showing. Once youâve done that, either scatter on a cookie tray and leave in direct sun for a day or two or in the oven with the door open on lowest heat possible for about 30 minutes. Keep checking and when they are leathery, they are ready to be taken out.
Then store in an airtight jar â thatâs it! Easy right?
